Gluten-Free Veggie Burgers

I am not a professional cook and I don’t usually write formal recipes- but these were just so good that I had to type it up and share.

I served mine with a salad on the side.

This is a great budget-friendly alternative to veggie burgers!

4 cloves garlic

2T olive oil

1t kosher salt

1t coarse black pepper

Blend into paste in food processor

Add bunch of fresh parsley and 1C beet chard or spinach

Pulse for 30 seconds

Add 2C cooked or canned black eyed peas or white beans

Add 2C cooked diced beets

Blend into burger like texture

Take ¼ cup of mixture and shape into patties. Place on a lined baking sheet.

Let set in fridge for at least 25 minutes.

Dip patties into corn starch. Brown in frying pan with olive oil until slightly crispy(1-2 min each side)

Serve like a burger (mustard, mayo, onion, lettuce, tomatoes etc)

You can also top with cheese or sour cream.

If you prefer not to fry, you can bake on 350 F for 20 minutes, but they probably will not keep their shape as well, and won’t be crispy on the outside.
